Yesterday, I had a phone call from an anxious restaurant owner who was concerned about his slick restaurant floors. He had noticed some near accidents and knew that this could become very dangerous for his business financially as well as a great hazard for his customers and his staff.
He was aware that his kitchen had a slick build up of grease. The floors were especially slippery when they got wet. He searched the web for information on how to fix slippery restaurant kitchen floors.

We divided his problem into two different areas. The first area of concern is the kitchen. Most kitchens in restaurants have quarry tile which is very slip resistant when it is new. The second area is the dining area which is slippery due to the tracking that comes from the kitchen. Most dining areas that are tile are ceramic or polished porcelain. These hard surface floors become very slick when they are wet.
Our suggestion was that he start with his kitchen. The first step is to use a good degreaser. This degreaser will be put on the floor according to the instructions on the bottle. The dilution should be exactly as specified. If the restaurant owner uses the wrong product like something with soap or animal fat in it he will compound his problem. He must use a degreaser that will emulsify greases. This degreaser should be brushed into the surface with a stiff deck brush and allowed to sit on the floor for a period of time. This will emulsify most of the grease. After this process is complete then the floor can be rinsed with a good warm water rinse.
Following this good cleaning, the floor should be treated with a product that will further etch the surface and break down any remaining coating of soap and grease.
Following the treatment with daily cleaning with the degreaser will keep the floor more slip resistant and safe. Documentation of these cleanings and the treatments might help in defense of a law suit involving a slip and fall accident.
Once the problem of the greasy buildup in the kitchen has been taken care of, the dining area should be much safer. This is because the grease is not being tracked throughout the dining area by the staff. The dining area can also be treated in the same way that the kitchen was treated. It will just be treated with a different product. The quarry tile product would be too harsh for the ceramic tile or other tile in the dining area.
